Restaurant Style Food at Home- Yummy Schezwan Fried Rice!!

Chinese! Though the food we get here is mostly Indo-Chinese, it is something we all grew up with! Chinese is comfort food, Chinese is sharing food (always family sized servings at Chinese restaurants, right?), Chinese is anytime anywhere food. Well, except for Corona, we would let anything in if you call it Chinese 🙂

Here is a restaurant style preparation of Schezwan Fried Rice from your favorite restaurants such as Mainland China or any Indo-Chinese local fried rice corner, you name it!

Step 1 –  Veggies Preparation:

  1. Take 1/3 cup of thinly sliced carrot, 1/3 cup of french beans and 1/3 cup of finely chopped cabbage
  2. Finely chop 3-4 garlic cloves

Step 2 –  Rice Preparattion:

  1. Take 1 cup basmathi rice and after washing, soak it for 30 minutes
  2. Drain the water
  3. Bring a pot of water to boil and add the rice adding a little salt to the water
  4. Cook until al-dente

Step 3 – Fried Rice Preparation:

  1. Heat 2 tbsp of sesame or any vegetable oil in a wok
  2. Keep the flame on high (this is important to get the right taste)
  3. Add the garlic, and once the raw smell goes away, add the remaining veggies
  4. Keep stirring them continuously on high flame for about 10 minutes
  5. Add schezwan sauce and stir it
  6. Add the cooked rice in portions and mix well
  7. Add 1 tsp black pepper powder and salt as per taste
  8. Add 1 tsp white vinegar
  9. Stir well and adjust the sauce and salt as per taste
  10. Serve with garnishing of spring onion greens
